Kale Chips


1 bunch of kale (curley or flat)
Olive oil
Salt if desired


Tear raw kale into bite size pieces (roughly the size of potato chips)

Toss lightly with olive oil (1-2 tablespoons will do a whole  large bowl and more)

Kale will be just coated but not dripping with oil (start with 1 tablespoon)

Spread the kale on a cookie sheet so chips aren't touching

Lightly salt (if desired)

Bake at 200 degrees F for approximately 30 minuites until crisp (but not brown or black).
The trick is to bake the kale slowly. It helps to check it part way through and a few minutes before the timer goes.

Let cool if you can and enjoy this low-fat, low-salt and high-fibre alternative to conventional chips.
